Italian cooking is enhanced by seasonal herbs. We all have dried herbs sitting in the rack, but where you can get your hands on the fresh version watch how it can make your meal. Take a saltimbocca, for example. Chicken or pork. A layer of prosciutto and then fresh sage pinned to its surface. Pan fry both sides with the crafted meat and allow a small sauce to emerge which you can capture with a little shallot and if naughty, a dash of marsala.  You can thank me later.
